
Couscous Salad
- 1 cup of couscous
- 1+1/4 cup chicken broth (lower sodium product)
- One dozend olives, coarsely chopped
- 1 teaspoon fresh lemon juice
- 2 cups of diced cucumber (one small cucumber)
- 2 cups of diced tomato (two small tomatoes)
- 1/2 cup chopped fresh herbs (parsley/ cilantro, dill)
- (1/4 cup chopped walnuts/ toasted peanuts toasted)
- black pepper to taste
Lentil Soup with Coconut Milk
- 32 oz (one container) of fat free, lower sodium chicken broth
- 4- 5 oz (third of a can) of unsweetened coconut milk
- 1/2 pound of chicken
- one stalk of leek
- 3 small tomatoes

- 2 teaspoons red curry paste
