Couscous Salad
  •     1 cup of couscous
  •     1+1/4 cup chicken broth (lower sodium product)
  •     One dozend olives, coarsely chopped
  •     1 teaspoon fresh lemon juice
  •     2 cups of diced cucumber (one small cucumber)
  •     2 cups of diced tomato (two small tomatoes)
  •     1/2 cup chopped fresh herbs (parsley/ cilantro, dill)
  •     (1/4 cup chopped walnuts/ toasted peanuts toasted)
  •     black pepper to taste
Use 1 cup of chicken broth to cook the couscous. Let it cool off. Then mix it with all the other ingredients in a large bowl.

Lentil Soup with Coconut Milk
  • 32 oz (one container) of fat free, lower sodium chicken broth
  • 4- 5 oz (third of a can) of unsweetened coconut milk
  • 1/2 pound of chicken
  • one stalk of leek
  • 3 small tomatoes
  • 8 oz of lentils (red or brown)
  • 2 teaspoons red curry paste
  • black pepper to taste
This dish is high in protein from both the chicken meat and the lentils. With the coconut milk being somewhat higher in fat and the curry past pushing the sodium, be sure to use fat free, lower sodium chicken broth to balance the dish nutrition wise.
